Ingredients:

  • 1 thick slice of brown German bread or rye bread
  • Gorgonzola, enough to spread generously
  • 1 small ripe pear
  • A few walnuts
  • A little honey
  • Black pepper, optional
  • A tiny pinch of salt, only if needed

This is a very simple open sandwich, but it works beautifully because every ingredient has a clear role. The brown German bread gives depth and a slightly sour, earthy base; the gorgonzola brings saltiness and creaminess; the pear adds freshness and sweetness; the walnuts give crunch; and the honey ties everything together.

The bread

Start with a good slice of brown German bread. A dense rye bread, seeded bread, or rustic sourdough-style German loaf is perfect here. The bread should have some character, because this is not just a neutral base: it is part of the flavour.

Toast the bread lightly. You do not want it dry and hard, just warm and slightly crisp on the edges. The heat helps the gorgonzola soften a little when you spread it on top.

The cheese and toppings

Spread the gorgonzola over the warm bread. You can use a mild and creamy gorgonzola dolce if you want something gentle, or a stronger blue cheese if you prefer a more decisive flavour.

Slice the pear thinly. The pear should be ripe but still firm enough to hold its shape. Arrange the slices over the cheese.

Roughly crush the walnuts in your hand and scatter them on top. Do not chop them too finely; the crunch is important.

Finish and serve

Finish with a small drizzle of honey. Be careful not to add too much, because the sandwich should remain balanced, not become a dessert. A little black pepper on top is very nice, especially if the gorgonzola is mild.

Eat straight away, while the bread is still slightly warm and the cheese is beginning to soften.
